As a beef deboner you are responsible for removing the bones from meat. Partly by machine (the first rough machining) and partly by hand (later, fine finish).
A beef deboner usually performs the work on the boning table in one assigned place. You bone quarters of (beef) carcasses. You will receive this via a rail. The tendon is cut with a knife, so that the meat part lands on the table. The boning machine first cuts the meat at the hip part, and then cuts along the hip bone, so that the top buttock comes off. Then you put the hipbone in a designated container. You put the knife down, saw the thinnest part of the hip bone. Then you slide the meat part onto the conveyor belt towards the next boning part and then start again on the next meat part that needs to be de-boned.
For this position, work experience is required.
